1 large round steak
1 large onion, chopped

4 onion tops, chopped
2 tablespoons chopped garlic
3 eggs, boiled and chopped
2 tablespoons chopped parsley
4 small red potatoes peeled and chopped in small pieces
2 packages Parmesan cheese cubed

Lay round steak flat and season. Mix all ingredients together and place on round steak. Roll and tie with string to keep together. Wrap in foil and bake at 350 degrees for about 1 1/2 hours. Drain grease and add to cooked tomato sauce and cook for an additional 1/2 hour. When ready to serve remove from sauce, remove string, and slice. Serve over your choice of cooked pasta.
Note: I also cook a pork roast and meatballs and add to my tomato sauce.
During Lent when we couldn’t eat meat we would add boiled eggs and boiled potatoes to our sauce.
