Crawfish Stir Fry
1 pound leftover peeled boiled crawfish
3 or 4 potatoes
1 medium onion
4 or 5 2-inch pieces of sausage
3 or 4 small cobs of corn (corn taken off the cob)
1 dozen eggs
Oil or butter for sautéing
3 tablespoons milk
Beat up eggs, add milk and seasoning. Dice the potatoes, onion and sausage and add leftover crawfish. Sauté mixture in butter or oil until heated thoroughly and then add egg mixture and cook for an additional few minutes. If there are no onions left from crawfish boil, sauté one diced onion before adding other ingredients.
