Cashew Chicken Salad Sandwiches

1/4 cup sour cream (regular, low-fat or fat-free)
1 tablespoon mayo (regular or low-fat)
1/4 teaspoon curry powder
2 cans of diced chicken breast meat, drained or 1 1/2 cups leftover cooked chicken
1/3 cup chopped celery
2 tablespoons chopped cashews
1 tablespoon finely chopped green onion
2 whole wheat hamburger buns, sandwich rounds, or pita breads
Combine first 3 ingredients in a large bowl, stirring until well blended. Add chicken, celery, cashews, and green onion; stir well. Serve on buns. Serves 2.
