Old Fashioned Chow Chow

1 1/2 gallons ground or chopped cucumbers
1 1/2 dozen green and red bell peppers

1/2 quart onions hand chopped
1/2 pint water
1/2 cup salt
1/2 cup flour
2 1/2 pounds sugar
1/4 gallon vinegar

1/2 tablespoon turmeric
1/2 quart prepared mustard
10 pint canning jars
Mix together cucumber, pepper and onions. Do not drain. Add water and salt and let stand 2 hours. Drain well, then soak in ice water for 30 minutes. Drain well again. Mix together flour and sugar. Mix well. Add vinegar and turmeric. Cook until thickened. Add prepared mustard and mix well. Add cucumber mixture and cook over low fire just until hot enough to seal jars.
Pour into jars and seal at once.
Makes 10 pints.
