Red Beans and Rice

1 pound red beans, sorted and washed

3/4 pound pickled pork

1 medium onion, chopped

1/4 bell pepper, chopped

Salt and pepper to taste

1/4 teaspoon turmeric

Cooked rice

Soak beans overnight in water to cover in refrigerator.

In same soaking water, bring beans to a boil. Lower heat and simmer for 1 1/2 to 2 hours.

Add pickled pork, onion, bell pepper, turmeric (this stops gas from forming in beans) and salt and pepper to taste.

Simmer another hour and half or until beans and pork are tender.

Serve over rice
