Smothered Beef Liver
4 slices of Liver
1 cup vegetable oil
1 cup chopped onion
1 cup all purpose flour
Salt
Pepper
Clean liver by cutting away excessive fat and gristle, then wash liver thoroughly under running cold water. Season to taste. Flour well on both sides. Put liver in hot oil in large skillet. Cook well and let brown on both sides. Remove liver from skillet. Sauté onions in oil for about 2 minutes. Add 1/2 cup of water and put liver back in skillet. Simmer for about 20 minutes and continue to add water for gravy. Serve over hot rice.
