Katie was born February 11, 1923, in New Iberia to the late Francois Xavier LaSalle and Stella DeBlanc LaSalle and was one of 10 children. She passed away peacefully on Saturday, August 24, 2013, at her residence, with her family at her side.
Katie owned and operated Cajun Relics, a local antique shop in New Iberia, for over 20 years. Her love of antiques led her to an interest in collecting bottles and being a member of a bottle club in New Iberia. While operating her antique shop, Katie was also a homemaker, caring for her family. She was a lifelong parishioner of Our Lady of Perpetual Help Catholic Church, an active volunteer for the St. Francis Diner and St. Francis Diner Garage Sale, the Day Lilly Club and the Gloria Mundy Travel Club.
She leaves behind many fond memories that will forever be cherished by all who knew and loved her, especially her five boys who will always remember fondly the years growing up in the “country” and watching their beloved mother canning fig preserves and blackberry jelly. The sights and smells of her preparing her delicious homemade rice dressing, fried chicken and fries will be cherished forever. Also, remembered are the times she gathered eggs and strained the milk that Daddy brought in from the barn and then how she had us turn the crank on the old ice cream freezer to make homemade ice cream. She had to make three batches (the first never made it to the freezer). We will always be grateful for having those beautiful experiences that are now memories of the past, etched in our minds, and never to be forgotten.
Survivors include her children W.R. “Dickie” Kibbe of Jeanerette, Francis Kibbe, Charles Kibbe and wife, Donna, Roy Kibbe and Stephen Kibbe, all of New Iberia; 13 grandchildren Chet Kibbe, Eric Kibbe, David Kibbe (Deidra), Brian Kibbe (Kathy), Mary Francis Kibbe, Annie Kibbe Breaux (Richie), Charles Kibbe Jr. (Jessica), Stella Kibbe Robider (Phillip), Joey Kibbe, Nicole Kibbe (Fathi), Denise Kibbe (Alan), Adrian Kibbe and Jeremy Kibbe; and 17 great-grandchildren Hayden, Will, Ali, Rhett, Kaitlyn, Jacob, Brandon, Savannah Kate, Trey, Yusuf, Mohamed, Mariam, Safiyah, Alan, Alicee, Ethan and Abigail.
Along with her parents, she was preceded in death by her husband, William Richard Kibbe Sr.; and her brothers and sisters Frances Walker, Helen Bienvenu, Bob LaSalle, Stella Mula, Tom LaSalle, Pete LaSalle, Dave LaSalle, Una Heffron and Dr. Roy LaSalle.
Serving as pallbearers will be Charles Kibbe Jr., Chet Kibbe, Eric Kibbe, Brian Kibbe, Richie Breaux and Phillip Robider. Honorary pallbearers will be David Kibbe, Jeremy Kibbe, Ethan Kibbe and Jacob Kibbe.
The family would like to express their heartfelt gratitude to Katie’s sitters Doris Boutte, Patsy Dore’ and Barbara Cade for their care and compassion in caring for Katie.
