Shrimp and Rice

1 tablespoon olive or canola oil

1 onion, medium or large, chopped

1 medium green bell pepper, chopped

1 1/2 pounds cooked, peeled shrimp, deveined, chopped

8 ounces tomato sauce

4 cups of water

1/2 teaspoon thyme

2 bay leaves

1/2 teaspoon salt

1/2 teaspoon garlic powder

2 cups uncooked rice

Heat the oil in a large saucepan and sauté the onion and peppers until slightly tender or clear. Add the shrimp, tomato sauce, water, thyme, bay leaves and seasoning. Simmer about 5 minutes.

Add the rice, stir well and simmer on low heat for about 20 minutes more.

Serves about 8.
