Cajun Cornmeal- Crusted Bacon

16 slices thick bacon

1/4 cup plain yellow cornmeal

3 tablespoons brown sugar

3 teaspoons salt-free Cajun seasoning

Preheat oven to 400 degrees. Combine cornmeal, sugar and salt-free Cajun seasoning in shallow dish.

Mix together. Dredge bacon slices in the mixture. Shake off any excess.

For baking, use wire rack that fits inside jelly pan or baking pan to allow grease to drip. Do not place on pan without a rack.

You may have to bake bacon in two separate batches.

Bake at 400 degrees for approximately 40 minutes or until coating turns brown and crisp.
