Costa Rican Gallo Pinto

3 cups rice

3 cups water

1/2 onion, diced

1/2 red bell pepper, diced

1 can (1 pound) black beans

1 tablespoon vegetable oil

Salt, according to taste

Cilantro, small amount

Cook the rice in a rice cooker with water, onion and bell pepper. Add a small amount of salt. Ten minutes before the rice is finished cooking, in a large frying pan add a little vegetable oil to fry some onions.

Once onions are almost cooked, add the black beans (the entire can and the same amount of beans as rice.)

Once beans are cooked, add the rice. Mix well until the rice changes color and is no longer clumpy.

Once mixed, it is ready to be served with the preferred sides.

Note: Can be served along the side of eggs, sausage, toast or avocado.
