Famous ‘Neon Pig’ comes to New Iberia

If you lose your one and only, there is always room for the hungry to fill your food dreams in out of the beams at the Neon Pig.

The fluorescent pink hues of the Neon Pig in New Iberia are as bright as its future. Located at 714 S. Lewis Street in New Iberia, the food truck opened up at the beginning of October by Brian Blanco.

Blanco was born and raised in Morgan City before making his way to Iberia Parish where he resides in Youngsville for the last 12 years.

He owns Crawfish Boss and his latest food adventure is opening the Neon Pig, a food truck with a fun name and even better background.

The Neon Pig is the second of its kind. The original restaurant is located in Tupelo, MS and has been voted the best burgers in America. After meeting the owners a few years ago, Blanco wanted to bring the unique restaurant to the Teche, but in the form of a food truck.

“I told them if I ever had a chance to open one up, I would,” Blanco said.

Blanco was able to receive a licensing agreement for the name and the products

“I always thought it had a great name, a funky name, and not everyone can say they have the number one hamburger in America,” Blanco said.

Blanco’s Neon Pig offers three different types of burgers: the smash burger, bash burger and the all-American burger, each with a distinct flavor combination that makes it unique to the taste.

“The all-American cheeseburger is what the name says it is… we grind down all of the meat, we make the pickles, we make the onions, so when they say ‘handmade’ or ‘homemade,’ it really hits home with this product,” Blanco said.

Their bash burger is a brisket grind, along with the all-American. It has harissa sauce on it, which is a roasted red pepper. Both burgers are served on a brioche bun.

The smash burger is a heavy beef grind and it has ribeye, porterhouse, t-bone, as well as bacon bits and pieces from Tennessee, blended throughout the burger, making a smokey flavor, served on a ciabatta bun.

The burgers are topped with various sauces, including a hoisin sauce, which is like an Asian barbecue sauce, Blanco explained. They even have something called a comeback sauce.

“I called it a redneck remoulade,” Blanco joked. “It’s a mayonnaise-based sauce.”

The burgers are also served with hand shaved fires and a drink. Everything is homemade, handground for its customers.

“It’s a very simple menu,” Blanco said. “I wanted to keep it simple because it’s a food truck.”

Blanco said there are plans to open a Crawfish Boss in New Iberia in the future, and he is using the Neon Pig as a trail for future expansion of a possible brick and mortar in Lafayette and how it’s received outside of Tupelo, MS.

His crawfish Boss is a big hit here, and Blanco said he wanted to expand into the Teche area market. He plans to move the original Crawfish Boss building located in Broussard to New Iberia in the near future.

The owner of the property he bought had a leftover food truck and Blanco said he knew it was the perfect time to start the Neon Pig.

“It just hit me,” Blanco said. “I’ve been wanting to do it. Here’s the chance.”

Blanco said the Neon Pig will add to the ever-growing food culture in the area and the booming businesses that have opened up in the last few years.

“I think New Iberia is gathering itself, and I just want to be part of it,” Blanco said.
