Adam Parma’s latest adventure promises to dazzle with fresh look, new name

A familiar food trailer is coming back, but this time, it is in New Iberia, with a new name and brand new look you must see and believe.
La Mia Stella officially opened its doors at its current location at the Paul Schexnayder Studio + Gallery, located at 335 W St Peter St.
Translated to “My Star,” La Mia Stella will serve some of Parma’s favorites, including his famous stromboli and homemade pizza. La Mia Stella will also serve shredded chicken tacos, homemade burgers, jambalaya, and specials and desserts as the week presents itself.
La Mia Stella will also offer delivery to its customers.
Parma’s stromboli, though, is the real crowd-pleaser, he said. It’s what he is known best for, and what he is excited to bring back.
“But nothing touches the stromboli,” Parma said. “That is what everybody loves.”
According to Parma, Stromboli is pizza dough stuffed with meat or cheese folded over like a calzone. The difference between the two is that a calzone is stuffed with meat, cheese, and sauce.
He added that a stromboli is sliced in half and dipped in sauce.
“The stromboli doesn’t get as soggy, and you can control the sauce if you want it,” Parma said. “I make my dough and sauce, and people love it.”
But the food isn’t the only thing that Parma is excited about.
As the name suggests, the food trailer will be painted Caribbean blue and adorned with mirrored stars.
“People eat with your eyes,” Parma said.”So when people see it, it’s not just going to be a typical food truck.”
Parma, originally from what he calls a small Italian town in Ohio, has lived in New Iberia since 2007.
Back in 2013, Parma opened his first food truck. After some time away, he decided to bring back some of his favorites. He said his customers were ready for his return, and having it close to home was an added bonus.
“Many people are waiting for me to open,” Parma said. “I want to create a spot that people are familiar with.”
With only a few weeks left before it opens, Parma said he is excited for what is to come at La Mia Stella, bringing something new and different to New Iberia, he added. He wants his trailer to shine bright like the stars on the outside.
“I want it to be a staple,” Parma said. “When you see it open, you will know what I am talking about.”
