The craft beer scene may have once been perceived as a niche or a novelty, but today it has more than established itself as a cultural phenomenon. The terms IPAs, stouts, sours and pilsners are woven into everyday conversations. While once the only descriptor required for beer was “cold,” now “juicy,” “citrusy,” “hoppy” and “hazy” are common to the consumers’ vernaculars. Knowing the impeccably high standards Acadiana holds for culinary world, it should be no surprise that we are home to two stellar breweries, Bayou Teche Brewing and Parish Brewing Company.
Bayou Teche Brewing perfects the South Louisiana tradition of enjoying good drinks and good food with even better company (and a little music) at their taproom and brewery at 1106 Bushville Hwy. in Arnaudville. The BTB crew has a newly installed wood oven, so we though it would be the perfect time to catch up with them to find out what they think makes the perfect pair.
1. A Slice Of: Alien Autopsy – Mozzarella cheese, Cajun saucer tomato sauce, Andouille, Tasso, Chaurice and smoked sausage, candied jalapenos and garlic confit.
Pairs With: LA31 Swamp Thing IPA – Citrus leaning hops, smooth malts, soft mouthfeel, plenty of haze and mild, pleasant bitterness. 6.3% ABV.
2. A Slice Of: Smokey and the Boudin – Mozzarella, garlic confit and white cream sauce, smoked boudin, green onions and olive oil drizzle.
Pairs With: LA31 Acadie French Farmhouse Ale – Amber colored, light-bodied farmhouse ale with tangerine-like hop aroma and soft sweet malt flavor and mellow bitterness. 5.7% ABV.
3. A Slice Of: C-3 Pepperoni – Mozzarella, Cajun saucer tomato sauce and pepperoni.
Pairs With: LA31 Pale Ale – juicy and hazy with bright notes of citrus hops, soft mouthfeel and soft malt balance. Hazy and citrusy apricot flavor. 5.5% ABV.
