Smothered Frog Legs

2-3 pounds clean frog legs, seasoned
3 medium onions chopped
1 bell pepper chopped
1/4 cup sugar
Vegetable oil
Cajun seasoning of choice
In a Magnalite or cast iron pot, cover bottom with vegetable oil. Place 1/4 cup of sugar in a mound in the center of pot, then spread slightly to cover the center. Let sugar caramelize until the edge turns brown, almost to the burning stage. Sugar should reach a very dark caramel color. Place onions and bell pepper in pot and cover. Shake the pot thoroughly, then add seasoned frog legs and cover and shake again. Cook 20 to 30 minutes covered on a low fire until tender.
