The Doerr family’s potato sausage casserole is wonderfully filling. It’s the type of comforting meal that sticks with you all day long. Dad, mom and kids alike find this dish delicious. There’s nothing like a good pork sausage and potatoes dish to fill everyone’s bellies after a long day.
“This recipe is one of our family’s favorites!” said Nebraska pig farmer, Aaron Doerr. “My mom has been making this casserole as long as I can remember. I farm with my parents, Gary and Liz Doerr, near Creighton, Nebraska.”

Gold Family Farms
Meet Gary and Liz Doerr, who operate Gold Family Farms near Creighton, Nebraska. Gary and Liz have been farming and raising pigs since they were married in 1980. “Gold” in the farm name stands for Gary Or Liz Doerr. Today, their son, Aaron, works with them on their 275 farrow-to-finish hog farm.
In 1998, the Doerrs were named “Pork All-American” by the National Pork Producers Council for their contributions to the pork industry and their community. They have always been active in the pork industry, serving on the Nebraska Pork Producers Board of Directors and being involved members of the Creighton area.
“Farrow-to-finish means we have sows (mother pigs), young growing hogs, and hogs being fed for market,” Aaron says. “We are firm believers that if you take care of your animals and the land they live on, they will produce healthy and nutritious pork products for everyone to enjoy.”
Animal welfare is the highest priority for the Doerr family. “Through every stage of a pig’s life we provide disease prevention, regular veterinary care, biosecurity and safe, comfortable housing,” Aaron says. These are principles that Smithfield Foods meat processing and packing plant in Crete, Nebraska, looks for in selecting the farmers to partner with to assure consistent, quality pork for consumers.
