Mustard Greens
with Salt Meat

4 bunches mustard green
1 medium onion chopped
2 tablespoons minced garlic
1/2 cup flour
Salt meat (small packages)

Put salt meat boiling. Remove stems from mustard green. Boil mustard, then chop or grind. Add vegetable oil, onions, and minced garlic. Cook until mustard turns dark.
Mix a small (4 ounce) glass of water with flour. Mix well until all lumps are removed. Pour over mustard and cook for 15 minutes. Add water to mustard until mustard takes on a watery consistency. Salt meat should be tender by then. Add to mustard greens.
Season to taste with salt, garlic powder and red pepper. Cook for 1/2 hour on low heat. Serve over rice or as a side dish. The dish is tasty served with cornbread.
