Eggplant, Shrimp and Sausage

1 package link sausage, cut into pieces
1 large onion chopped
2 eggplants chopped
1/2 cup bread crumbs (garlic flavored)
2 cups cooked shrimp
Salt and pepper to taste
Fry sausage, drain and reserve fat. Slowly fry onion and eggplants in sausage fat until eggplants are soft. Stir in bread crumbs, shrimp and sausage. Season to taste.
Bake at 375 degrees for 35 minutes. Top with additional bread crumbs if desired. Serves 4-6.
