Smothered Potatoes and Sausage

6 medium-sized potatoes, peeled and sliced, or cubed
1 pound of smoked sausage of choice, sliced
1 cup of chopped onions
1/2 cup of chopped green bell pepper
1/2 cup chopped celery
1 tablespoon minced garlic
Salt and red or black pepper, or favorite Creole seasoning, to taste
1/4 cup chopped green onions
2 tablespoons chopped parsley
Sauté smoked sausage, onion, green bell pepper, celery and garlic in heavy Dutch oven or large cast-iron pot till sausage is lightly browned and vegetables are translucent.
Add potatoes to pot and stir to incorporate all ingredients. Add favorite seasoning to potatoes as desired.
Cook potatoes and sausage combination over medium heat until potatoes are cooked on one side, turning potatoes over and continuing to cook until potatoes and sausage are cooked through. Stir in green onions and parsley and serve hot.
Note: You may need to add small amount of water or broth if necessary to prevent sticking of potatoes during the cooking process.
