Air Fryer Bacon-Wrapped
Scallops with Sriracha Mayo
1/2 cup mayonnaise
2 tablespoons Sriracha sauce
1 pound bay scallops (about 36 small scallops)
1 pinch coarse salt
1 pinch freshly cracked black pepper
12 slices bacon, cut into thirds
1 serving olive oil cooking spray
Mix mayonnaise and Sriracha sauce together in a small bowl. Refrigerate Sriracha mayo until ready to serve.
Preheat the air fryer to 390 degrees F.
Spread scallops out onto a plate or cutting board and blot dry with a paper towel. Season with salt and pepper. Wrap each scallop with 1/3 slice of bacon and secure with a toothpick.
Spray the air fryer basket with cooking spray. Place bacon-wrapped scallops in the basket in a single layer; split into 2 batches if necessary.
Cook in the air fryer for 7 minutes. Check for doneness; scallops should be opaque and bacon should be crispy. Cook 1 to 2 minutes longer, if necessary, checking every minute. Remove scallops carefully with tongs and place on a paper towel-lined plate to absorb excess oil from the bacon. Serve with Sriracha mayo.
Servings: 9
NOTE: I use the smaller bay scallops for this. If you are using jumbo scallops it will require a longer cooking time and longer strips of bacon.

Air Fryer Sweet and
Spicy Roasted Carrots
1 serving cooking spray
1 tablespoon butter, melted
1 tablespoon hot honey (such as Mike’s Hot Honey®)
1 teaspoon grated orange zest
1/2 teaspoon ground cardamom
1/2 pound baby carrots
1 tablespoon freshly squeezed orange juice
1 pinch salt and ground black pepper to taste
Preheat an air fryer to 400 degrees F. Spray the basket with nonstick cooking spray.
Combine butter, honey, orange zest and cardamom in a bowl. Remove one tablespoon of the sauce to a separate bowl and set aside. Add carrots to the remaining sauce and toss until all are well coated. Transfer carrots to the air fryer basket.
Air fry until carrots are roasted and fork tender, tossing every 7 minutes, for 15 to 22 minutes. Mix orange juice with reserved honey-butter sauce. Toss with carrots until well combined. Season with salt and pepper.
Servings: 2
NOTE: These tender and roasted carrots cooked in the air fryer can be on your table in less than half an hour. Tossed in a honey-butter sauce and sprinkled with your choice of fresh basil, chives, or just salt and pepper.
