Southern Collard Greens

2 bags of store-purchased collards

1 pound of bacon

1/2 pack of Tasso

1 large onion chopped

1/3 cup minced garlic

Turkey necks or ham hocks

Salt, black and red pepper to taste

Remove the stems from collard greens. Cut up the pound of bacon and Tasso into bite size pieces. In large pot fry bacon and Tasso. Once cooked, add chopped onion and minced garlic. Sauté in bacon grease.

Add choice of turkey necks or ham hocks. Add spices of choice. Add collard greens. Add water to cover a little more than half of the greens in the pot, cover and cook on medium approximately 30 minutes then lower fire and cook for 40 minutes.
