Smothered Okra with Drumettes

2 gallon bags sliced okra

1 family pack smoked sausage, sliced

1 family pack chicken drumettes

1 pound crab meat

4 fresh carrots, sliced

1 red bell pepper, finely chopped

1 yellow sweet pepper, finely chopped

1 red onion, finely chopped

1 white onion, finely chopped

1 pound crabmeat

3 tablespoons cooking oil

1 tomato, diced

Coat a Magnalite or cast iron pot with cooking oil. Put okra, bell peppers and onions in pot. If cooking on top of stove, cook on medium heat, stirring frequently to prevent sticking for 1 hour. If cooking in oven, place in pre-heated 350 degree oven, cover pot and cook for 1 hour, stirring only a few times. Add sausage and chicken and cook for an additional hour. Add tomato and carrots at the last half hour of cooking time. Crabmeat can be added right before the end of cooking time.

Note: Other options include fresh shrimp, dried shrimp, turkey necks or wings, stew meat, chicken gizzards and ham hocks.
