Tatsoi Dip

2 tablespoons butter

1 cup onion, chopped

5 large garlic cloves, minced

1 tablespoon all-purpose flour

1/4 cup chicken stock

1/4 cup light cream

1/2 bunch tatsoi, chopped very thinly

1/2 cup freshly grated parmesan cheese

2 tablespoons light sour cream

Freshly ground pepper

Kosher salt

Melt butter in a pot over medium heat. Add onion and garlic and cook until onion is tender, about 5 minutes. Add flour and stir for 2 minutes. Whisk in stock and bring to a boil, whisking constantly. Add cream and tatsoi and bring to a simmer, still whisking constantly. Cook for another 2 minutes, whisking often.

Remove from heat, and stir in cheese and sour cream. Season with salt and pepper and serve with chunks of fresh bread.
