Tatsoi Salad with Pears and Strawberries

2 tablespoons vinegar

2 tablespoons canola olive

1 tablespoon apple juice (optional)

1 tablespoon honey or sugar

4 cups tatsoi

1 cup sliced pears

1 cup sliced strawberries

Salt and pepper to taste

Make the dressing in a small bowl by combining the vinegar, oil, apple juice and honey. In a large bowl, add tatsoi, pears, and strawberries. Pour the dressing over the salad and toss gently. Add salt and pepper to taste. Refrigerate leftovers. Makes 5 servings.
