Sweet Potato Casserole

3 cups sweet potatoes, cooked and mashed

1 cup sugar

1/3 cup evaporated milk

2 teaspoons vanilla

3 eggs, beaten

1 stick of butter, softened

Topping

1 cup brown sugar

1/2 cup flour

1 stick of butter, room temperature

1 cup chopped pecans

Mix sweet potatoes, sugar, evaporated milk, vanilla, eggs and butter together well. Put into a 9×13-inch dish. Mix topping ingredients together and crumble onto casserole when ready to spread.

Bake at 350 degrees for 40 minutes or until done. Recipe can be doubled.
