Porchetta spice mix

When your home-cooking repertoire seems like it’s on repeat more often than not, there’s something to be said for condiments and spices that can turn ho-hum ingredients into crave-worthy dishes.

With roots in traditional Italian cooking, this spice mix from Stephen Bukoff, executive chef at The Langham, Boston, brings tons of flavor (with minimal effort) to a variety of dishes, from simple roasted vegetables to porchetta, the classic Italian boneless pork roast that has earned many fans worldwide.


Porchetta Spice Mix

Yields: 1 cup 

  • 1/2 cup garlic flakes
  • 3 Tbsp dried thyme
  • 2½ Tbsp dried rosemary
  • 1 Tbsp fennel pollen
  • 1 Tbsp ground black pepper
  • 2 Tbsp SalterieOne Classic Sea Salt
  • 2 Tbsp dried orange zest

In a medium bowl, combine all ingredients, mixing thoroughly. Transfer spice mix to an airtight container to preserve the aromatics and flavors. Use as a rub for grilled or roasted meats or sprinkle on roasted or grilled vegetables.
