Cherry Coca-Cola Cake

2 cups white granulated sugar

2 cups sifted all-purpose flour

1 1/2 cups mini marshmallows

1/2 cup vegetable oil

3 tablespoons cocoa

1 cup Coca-Cola

1 teaspoon baking soda

1/2 cup buttermilk

2 eggs

1 teaspoon vanilla extract

Preheat oven to 350 degrees. Sift sugar and flour in bowl and add marshmallows. In saucepan, bring to boil butter, oil, cocoa and Coca-Cola. Pour over dry ingredients. Dissolve baking soda in buttermilk just before adding to batter. Add eggs and vanilla. Mix well. Pour into two 8-inch cake pans that have been greased. Bake 35 minutes.

Frosting:

1/2 cup butter

3 tablespoons cocoa

3 tablespoons Coca-Cola

3 tablespoons maraschino cherry juice

1 16-ounce box confectioners sugar

1 teaspoon vanilla extract

1/2 cup chopped maraschino cherries

Combine butter, cocoa, coco-cola and maraschino cherry juice in mixture. Add confectioners sugar slowly. Mix until fluffy. Split both cooled layers in half. Frost between each layer, adding chopped maraschino cherries. Frost the cake and add maraschino cherries to the top. Serves 8.
