Crawfish Fettuccine

3 pounds crawfish
3 blocks of margarine

3 finely chopped onions
2 ribs of celery, chopped
1 bell pepper, chopped
2 garlic pods, chopped
4 tablespoons parsley, chopped
1/4 cup flour

1 pint of half and half cream
1 pound jalapeño cheese
1 box of egg noodles, cooked according to package directions
Grated Parmesan cheese
Sauté vegetables in margarine and add parsley, crawfish and garlic. Cook 10 minutes.
Add cream, cheese and flour mixed with small amount of half and half cream to the mixture. Cook noodles according to directions on package.
Mix with the crawfish mixture. Place in casserole dish, top with grated Parmesan cheese. Bake at 350 degrees for 20 minutes.
Makes 3 medium casseroles and freezes well.
