Tarragon Vinaigrette

1/4 cup red wine

1 tablespoon sugar

1 teaspoon minced garlic

2 teaspoons spicy Dijon mustard

1/2 cup grapeseed oil or olive oil

Salt and pepper to taste

Combine vinegar, sugar, garlic, mustard and tarragon in a small bowl. Whisk while slowly adding the oil in a thin stream.

Season with salt and pepper if desired.

Serve over the lettuce and salad selections of choice.
